Ashley Christensen is chef-owner of Poole’s Downtown Diner—a restaurant that’s reason enough to visit Raleigh, North Carolina. She’s a master of updating down-home staples with deft flavor combinations and impeccable technique, and this Thanksgiving she’s riffing on an American classic: the sweet-potato casserole. “It was ever present at the Thanksgivings of my childhood,” Christensen says of the mix of canned sweet potatoes topped with tiny oven-browned marshmallows. “This version has a little more maturity—it’s casserole all grown up.”
