Starbucks Runs Faucets All The Time, Wastes 6 Million Gallons of Water a Day

A call to several Starbucks locations this afternoon revealed that the Raleigh stores are in lock step with the coffee shop company’s policy of running a faucet during all business hours.  This is their method for keeping spoons clean.  When asked if Starbucks kept this up through the water crisis, an employee at the North Hills location replied “Yes we did.“  Another employee at a Glenwood Avenue location when asked what she thought of the policy “That’s just the way it is.“ 

As of today, UK starbucks reversed this policy after public outrage when the Sun broke the story of the policy. The Sun says that Starbucks wastes over 23 million liters of water or over 6 million gallons everyday from this policy. 

All 10,000 shops worldwide gushed water into sinks to wash spoons, wasting enough to fill an Olympic pool every 83 minutes. Starbucks said a flow was needed for hygiene reasons — a claim ridiculed by experts.

During the last year NC has spent most of the year in sever drought.  Individuals were not allowed to water lawns or gardens, wash cars, and restaurants were prohibited from serving water without being asked.  During this time Starbucks continued their policy of running the faucets all day long.

    I’m not trying to stand up for Starbucks in any way, but lots of restaurants, especially fast food places, do this.  I noticed at Dairy Queen last month that they have a constantly running sink on the back counter that they keep spoons and other implements in.  I also remember the IHOP on Hillsborough has a constantly running sink on that service counter that is directly in front of you when you enter the restaurant.  The sink receptacle itself, as well as the faucet seem to be made for this very purpose.  The stream of water is very small and somewhat slow, but it seems like a huge waste of water anyways.

    From my experience working in restaurants I have seen thousands of gallons of water wasted in the dishwasher when staff run a cycle with only a few items in the washing tray day after day.  I have seen the bar staff at a very popular bar/restaurant on Hargett street run the bar glass washer with only a few glasses in it.

    Before we all get bent out of shape over this fact - that incidentally is not new. It has been a favored procedure for over 80 years in the restaurant business. I myself have worked in food service for over 35 years.  If you want to stop this procedure then you must go to the Department of Health for allowing this procedure.
    Here are the guidelines posted by NC Department of Health.
    15A NCAC 18A .2620 STORAGE AND HANDLING OF UTENSILS AND EQUIPMENT
    (d)  When utensils are used to dispense frozen products or moist foods, the utensils may be stored in running water
    dipper wells only when the water has sufficient velocity to flush food residues into the overflow drain. 

    Lets not forget that another item is being overlooked. The thawing of the food you eat in restaurants that comes frozen.

    c)  Potentially hazardous foods shall be thawed:
    (1) in refrigerated units at a temperature not to exceed 45° F (7° C);
    (2) under potable running water of a temperature of 70° F (21° C), or below, with sufficient water
    velocity to agitate and float off loose food particles into the overflow.

    Now, lets look at all the ice cream shops/bakeries that have this same procedure in place.

    To pick on one establishment over a way of sanitation is unfair.

    To lay blame on wasteful practices, one should force the State of North Carolina to remove these guidelines.  Restaurants, bars, nighclubs, ice cream shops, sandwich dealers, are only following guidelines set by the people who manage our health and wellbeing. 

    If you are unhappy with the process, call your representative and voice your concern.
